Honey Fairy Land Yellow Tea

This is a lovely example of a yellow tea. The aroma hints at warm toasted grass and the flavor is smooth, rich and complex with almost no bitterness or astringency. This tea is much less vegetal than a green tea but still holds a hint of the green. 

Yellow Tea is a rare category that is little known in the USA. It is processed in a similar way to a green tea but goes through an extra step where the leaves are left in a warm moist environment to ferment slightly.
